Browse your SharePoint site from/within Outlook (2007)
Right Click on a Top folder in which you want the new folder to be located and click on New Folder
Name the folder appropriately in the Name field and click on OK
Now Right Click on the newly created folder and click on Properties
Click on the Home Page tab and type the URL of your SharePoint site in the Address Field and also put a check mark in front of Show home Page by default for this folder
Click on OK and you will now be able to browse your SharePoint site from within Outlook.
You can repeat the above process and create different folders for different Projects/Department sites that you need to browse regularly.
